When Roger Fu fulfilled his dream of launching an Australian bubble tea brand in 2018, he brought a unique perspective to the popular beverage market.
Roger had a clear mission with Gotcha Fresh Tea: to elevate the idea of bubble tea from a quick, convenient drink to a premium, crafted experience.
“I saw a gap in the market,” Roger says. “Most Asian bubble tea brands were simply bringing the drinks into Australia but not many were localised, or tailored for Western customer preferences, lifestyle, and expectations.
“I wanted to bring the best-quality Asian bubble tea into Australia in a way that Western consumers could easily appreciate and enjoy,” he says.
His initial Australian business venture in international import and distribution proved invaluable. This experience taught him the nuances of cultural food adaptation, the critical need to customise flavours for multicultural markets, and how superior supply chain logistics drive product consistency.
“Australia is a highly multicultural country, so my experience in both Asian and Western food systems allowed me to create products that truly fit the local market,” he says.
One of his close friends is a second-generation tea farmer from Taiwan, and he proved key to bringing Roger’s vision to life.
Roger learned all about tea varieties, brewing techniques, flavour balance and Taiwan’s bubble tea culture from his friend. And then he had the fundamentals of a high-quality tea product at his fingertips.
Why is Gotcha Fresh Tea distinct in the market?
Gotcha does bubble tea differently. The company owns a tea plantation in Taiwan so it can control the key ingredients from leaf to cup, ensuring it is serving premium-quality, single-origin tea leaves.
Every step of the sourcing follows traditional Asian tea-making methods, from planting to harvesting and processing.
In store, each drink is freshly-brewed using real tea leaves and filtered water. Ingredients are carefully selected to deliver an authentic taste – there are no shortcuts or artificial flavours here. Even the fruit syrups are made with seasonal fruits grown in the ideal climate and soil in Taiwan.
Roger has made innovation a core brand promise to consumers, with a Japanese-style yogurt drink Yogumuji, cheese foam, and artisanal fruit teas among the standout menu choices. Customers can also customise their drinks for sweetness, ice and toppings.
Gotcha also enjoys high impact collaborations with premium brands such as Disney’s Lilo and Stitch, Hello Kitty, Pokemon and Spongebob. The much-loved characters feature on ranges of drinks tumblers that young customers and families can’t resist.
And to enhance the whole experience, Gotcha has created a modern, stylish store design that encourages customers to sit and sip. The warm and welcoming space enables a premium bubble tea encounter, whether customers want to indulge in a quiet moment or share the tea experience with friends.
The concept of bridging cultures with an authentic tea brand not only impressed Time-Out which has ranked it among the best bubble teas in Australia, but it’s distinct approach has acquired an international following. From a single store in Melbourne, Gotcha Fresh Tea now has more than 200 stores across 12 countries – and it’s still growing.
