‘Sustainability’ has another meaning for this franchise

Sarah Stowe

Sustainability has become a key issue for all Australians, not just those involved in a business sense.

Where the environment is concerned, sustainability means taking preventive steps to manage our depleting resources, such as food, water, natural earths and gases.

In 2013, Sustainable Australia Report saw climate change, the ageing population, declining health and growing cities as key issues impacting the natural environment.

By 2031, the report predicts that globally, “countries will be struggling to meet the increased demand for energy, water and food.

Whilst at the same time, meeting environmental stresses of global warming, loss of species habitat, ocean acidification and over-harvesting of fauna and flora,” says the report.

Increased awareness around these issues have impacted small businesses -particularly those involved in food retail- as consumers  become more conscious of the ‘food journey’, as well as the impact processed, chemical laden foods and drinks have on our health.

Healthy and Sustainable

Restaurants Australia have earmarked healthy and sustainable produce and food as a key trend in food retail. It says,

“People are passionate about good food, but they want it to be good for them. Food safety is a global concern, and a key trend is in provenance – understanding where your food is grown and by whom.”

In the fast food industry this trend is visibly underway, with a variety of new restaurants opening that cater for those of us who want to eat healthy, but whom don’t have the time to prepare at home, or dine at restaurants.

Sushi is one food trend that has been building for several years -becoming mainstream even-as large food retailers such as Woolworth’s and Coles last year launched Sushi bars onto their shop floors.

Sushi eaters in Australia have grown from 36 percent in 2009, to more than 40 percent in 2014.
