Salsa’s Fresh Mex Grill trials pop up format

On 14 January, Salsa’s Fresh Mex Grill launched its first temporary pop up store at the Grand Slam Oval, Melbourne Park, which is the home of the Australian Open.

The pop up store offers customers the company’s full menu, which is inspired by the cuisine found in Baja California, Mexico.

It includes burritos, hard and soft tacos and quesadillas, as well as naked burritos or ‘bowls,’ which contain meat, salad or vegetables and are served with corn chips.

The pop up store, which has been purpose built in a shipping container, will be in operation over the course of the Australian Open.

Brett Carman, general manager, Salsa’s Fresh Mex Grill said the store has outperformed expectations so far. 

“We achieved sales 30 per cent more than forecasts in the first three days of trade.  Working on the response from customers so far, I expect we’ll serve 15,000 burritos in 14 days,” he said.

“The feedback from customers is they love our food because it’s made from whole, fresh ingredients, it’s made-to-order and served quickly.”

The pop up store will be open from 10am – 9pm each day.
