It started in Darlinghurst five years ago; now the Mad Mex restaurant chain has reached 30 outlets with a projected 10 to 20 more stores to open in the next 13 months.

The Baja-style cuisine is now offered in Sydney’s northern beaches, and Belconnen, ACT, the latest two outlets to open their doors.

Two more stores are set for opening on 22 and 29 November: Randwick in Sydney, and Brisbane’s Queens Plaza.

The CEO and founder of Mad Mex, Clovis Young, said “The business growth we’ve experienced is staggering and exciting. I think one of the biggest keys to our success has been building a team of passionate and engaged franchisees who are as driven to deliver freshness, flavour and a memorable customer experience as we are,” he said.
