Last Slice is developing a strong reputation for its premium entertainment venues, offering fabulous food and brilliant beverages alongside big screen sports, social gaming, and family-friendly activities.
It’s the go-to for sports lovers and locals alike.
So it’s no surprise that this Western Australian chain, poised to open its fourth venue soon, is an appealing option for an existing hospitality business owner looking to accelerate their growth.
Existing hospitality operators can tap into the experience, systems and processes that underlie the Last Slice chain of sports entertainment venues to propel their business to the next level.
Harnessing group power
For single venue operators, the capacity to harness the purchasing power of a group means market pricing that delivers a competitive edge, says newly-minted general manager George Green.
“If you’re a single venue operator dealing with suppliers, your leverage factor is quite small. Whereas we’re going back to food suppliers, beer suppliers, spirit suppliers, to negotiate quite aggressive pricing as the group continues to grow,” George says.
George is well placed to deliver on great pricing with extensive brewery and beverage experience that’s invaluable to his role growing the Last Slice brand.
“We are now at the level based on my experience in beer where we can start negotiating at at top level market rates to get our pricing down. And you would just struggle to do that as a standalone operator because suppliers are never willing to offer their best price for smaller volumes,” he says.
“And that’s our bread and butter. Our number one seller across all of our venues is one particular WA beer. It makes up over 25 per cent of our total beer sales – and we have 16 taps.
“So, to get access to that beer at such a competitive price for us is huge.”
A growth-driven group
Existing venue operators keen to continue as hands-on franchisees will join a locally-owned, growth-driven group whose owners remain highly engaged in the running of the business while a new leadership team ensures operational excellence as the group scales.
George heads up the team, which also includes two front of house area managers geared to scaling group operations, and a comprehensive back of house team driving menu development and food quality standards.
At Last Slice, centralised menus, branding and promotions ensure a consistent customer experience across the growing brand.
A franchisee will continue to manage their venue’s daily operations; the franchisor team delivers the backend processes and menus.
Buying in to the Last Slice concept is an opportunity to leverage a venue’s existing infrastructure and leases, and benefit from centralised support and supply chain.
George sees a host of advantages for single venues to become franchisees.
“In addition to competitive supplier pricing, franchisees will be tapping in to the support, the structure, and the network,” he says.
Last Slice is food, drinks and entertainment on a large scale. A typical venue seats 350 to 400; the Kelmscott site opened this year has a 520-seat capacity and the next venue at Eaton, to open mid-2027, will have an even larger footprint.
“That size seems to be about right for sporting occasions,” George says.
Accelerating growth with franchises
The venues offer broadcast sports, digital and standard darts, pool tables, children’s play areas, a self-service ice-cream bar, weekly interactive gameshows and occasional special events and themed nights.
“The larger the venue’s footprint, the easier it is for us to execute that offer,” he adds.
While Last Slice is keen to expand through franchising, it will continue to open company-owned venues, at about one every 12 to 18 months.
The brand started in Bunbury so is very well known in the south west of Perth, George says. The April 2025 opening in Midland took it into Perth metro.
“We’ve still got a really big runway to actually grow our brand and increase our exposure,” he says. “We’re obviously looking at growing our footprint and really establishing our brand across WA.”
So an early adopter of the brand will reap the benefits of an accelerating concept.
“Last Slice has got a really big growth trajectory ahead of it as more people become exposed to it and understand who we are and what we’re about. This is a prime time to become a franchisee,” he says.
